Salad + Salmon! Easy, Fresh, Delicious.
Ever find an odd assortment of leftover produce in the fridge!? - a single bell pepper, half a cucumber, an avocado, assorted greens? This is the perfect opportunity to throw together a delicious, simple salad before these items go to waste!
The perfect entree for your side salad is a baked salmon fillet. This complete meal is healthy, and easy peasy to make.
A fresh salmon fillet doesn’t need much:
Spoonful of chopped garlic
Olive oil
Salt + Pepper to taste
Breadcrumbs (optional)
Preheat oven to 425 degrees. Oil and season your fish with garlic, salt and pepper. You’ll want about a half pound of salmon per person. If you’d like, top the fillet with breadcrumbs for added crunch. Pop in the oven for about 15-20 minutes (depending on desired doneness and thickness of the fillet). You’ll know it's ready when it flakes easily with a fork.
While the salmon cooks, slice your veggie assortment and toss in a bowl with greens. Anything goes, but we happened to have avocado, red bell peppers, cucumbers and romaine. Dress with your favorite dressing. No shame in pre-made salad dressing- we love using Annie’s organic Cesar.
Serve hot salmon alongside the cold fresh salad and enjoy the colorful plate! Easy, healthy, delicious.
