Chimichurri - Sauce of the Summer
The perfect use of all that leftover cilantro in your veggie drawer! Chimichurri is a simple, flavorful sauce that can be served over your favorite protein or served on the side as a condiment. It’s tangy, fresh and versatile. There are lot of varieties of Chimichurri, but we based our recipe on what we had available that was fresh and accessible:
Cilantro
Parsley
Minced Shallots
Minced Garlic
Red Wine Vinegar
Olive Oil
Jalapeno (optional)
Salt/Pepper to taste
Simply chop one bunch of cilantro and one bunch of parsley as finely as possible. Add in a couple generous spoonfuls of minced garlic and shallots, ¼ cup of red wine vinegar and ½ cup of olive oil. Stir until it reaches a pesto-like consistency. Add chopped Jalapeno for extra zing! Salt and Pepper to taste.
Another option is to dump all ingredients in the food processor and skip the chopping altogether!
We served our chimichurri on a filet mignon one night and saved the leftovers for a chicken breast topping later in the week. It's also a great marinade for veggies and fish. This sauce will make any dish taste like summer!
