Guilt-Free Dessert: No Bake Bars!
These bars are so easy to make and have nearly no added sugar- so no feeling guilty the next morning. Only four ingredients, and no baking skills required! You don’t even need to turn on the oven. For peanut lovers, these will make your day! If you prefer almonds, substitute almond butter for peanut butter, but everything else is exactly the same.
All you need:
1 ½ cup Peanut Butter (all natural crunchy preferred)
1 cup coconut flour
3 ¾ cups dark chocolate chips (about 2 bags)
2 Tbsp. pure maple syrup
First, mix 1 ¼ cup peanut butter, coconut flour and maple syrup in a medium bowl. Save the last ¼ cup of peanut butter and set aside. Spread a prepared baking pan (we suggest lining with parchment paper for easy removal) with peanut butter mixture. Even it out with a spatula or spoon so the layer is smooth.
Next, melt the chocolate using the double boiler method. That means heating up water in a pot and stirring the chocolate in a heat safe bowl set on top of the pot of water. The best way to do this is: start with ¼ cup and slowly add chocolate, one handful at a time, as it melts. When chocolate is silky, add in the remaining peanut butter and stir until smooth.
Finally, pour chocolate mixture over peanut mixture. Spread evenly with a spatula or spoon to create a smooth surface. Put the pan in the freezer for about 60-90 min. Once bars are hardened, remove from the freezer and cut into the desired size rectangles and serve! If you are storing for later, keep them in the fridge so they don’t get too melty.
