Chicken Parm Party!
Chicken Parmigiana is a cheesy, crispy breaded chicken breast usually served over pasta- In this recipe, we encourage you to skip the pasta and enjoy this slightly healthier, yet still indulgent version. You’ll get all the creamy deliciousness, without the extra sugar and carbs!
What you’ll need for 4 four servings:
2 large chicken breasts
1 egg
1 ½ cups of breadcrumbs
1 jar of your favorite marinara sauce
¼ cup fresh basil (finely chopped)
½ cup fresh mozzarella cheese (cut into rounds or cubes)
¼ cup grated parmesan cheese
1 tbsp. Olive oil
How its done:
First, preheat oven to 425 degrees.
Prepare chicken breasts by cutting them in half long ways to create 4 thinner pieces. Crack the egg in a large bowl and whisk until smooth. Drop chicken in egg mixture and stir until breasts are evenly coated on both sides. Next dip both sides of each breast in the breadcrumbs so they are evenly coated without bald spots.
Heat a skillet with the olive oil over high heat. Brown each chicken breast by placing in the hot skillet for just 2-3 minutes each side - don’t worry, we’ll be finishing them in the oven, this is just for crispiness and color.
Next, place browned chicken in a large baking pan. Pour marinara sauce over and around each breast evenly so they’re all coated for optimal moistness. Lay mozzarella rounds (or cubes) on top of chicken, even distributed. Finally, top with parmesan and basil, sprinkling evenly over everything.
Let it bake for about 40 minutes or until the top cheese layer is crispy and browned (but not burnt!). Be sure to let this cool for at least 15 minutes before serving because that cheese will be hot.
