Protein-Packed brunch!

Perfect for a weekend brunch, this egg skillet is simple in preparation, nutritious and is sure to impress your guests. It's a one-skillet meal that is easy on the clean up too!

What you’ll need:

1 Bell Pepper

1 Large Onion

1 Package breakfast sausage

1 cup chopped white mushrooms

1 dozen eggs (or egg whites for low fat version)

1 Tbsp chopped garlic

1 Avocado

Grated Parmesean cheese

Chopped green onion for garnish (optional)

Salt/Pepper to taste

Total Prep+Cook Time : about 30 min

  1. Start by preheating the oven to 400 degrees. Heat a dab of olive oil in a large skillet over medium heat

  2. Chop bell pepper, onion, mushroom and sausage into bite size pieces while skillet heats and crack eggs in a bowl and stir with salt and pepper

  3. Add peppers and onion and chopped garlic to hot pan and saute until peppers are soft and onions translucent (about 8 min)

  4. Add sausage and mushrooms, salt and pepper, and cook until meat is cooked through, stirring continuously (about 8 min)

  5. Turn off heat, pour in egg mixture, sprinkle with parmesan and put skillet in the oven - bake 15 minutes

  6. While skillet bakes, chop green onions and avocado for garnish

  7. Top skillet with garnishes (arrange as seen above) and salt and pepper to taste- serve hot

  8. If serving multiple people, cut evenly into triangles, like pizza slices!
