One Pot Tasty Thai Coconut Soup

One of our go-to dinners on a rainy day is this delicious spicy Thai-inspired soup! One pot dinners are the best because they’re not too laborious and make for an easy clean up.

For this simple recipe you can omit any ingredients you don’t love, but we use:

  • Chicken Broth

  • Chicken Breasts

  • Sliced Mushrooms

  • Red Bell Peppers

  • Onions

  • Coconut Milk

  • Fresh ginger

  • Limes

  • Hot sauce

  • Fresh cilantro

  • Chopped garlic

  • Brown Rice Noodles (gluten free!)

In one large pot, start by browning diced chicken breast and garlic in some oil over medium heat. After chicken is slightly browned on all sides, add peppers, onions, mushrooms and diced fresh ginger. Once veggies are softened, add one carton of chicken broth and let it come to a boil, stirring periodically. Once it's bubbling, lower heat to low and add one can of coconut milk, hot sauce and squeezed fresh lime juice. Make it as spicy and tangy as you like! We usually use two full limes and one tablespoon of hot sauce. Stir in one handful of chopped cilantro and let it simmer, adding salt and pepper to taste. The longer you let it simmer, the more flavor will develop- it’s best to put the lid on and go do something else for at least 30 minutes. Right before you’re ready to eat, stir in the rice noodles. After a few minutes of stirring, turn off heat and serve! Add more fresh cilantro, lime and hot sauce as garnish!
