Comforting Cabbage Stew
There is nothing more satisfying on a chilly day than a nutritious, hearty bowl of something warm and smoky. This recipe has few ingredients, is easy to assemble, and only requires one pot! Filled with rich and complex flavors, this recipe yields an impressive result with little effort - the best kind of recipe for groups and families! This recipe is low in carbs and sugar and perfect for folks searching for nutrient dense, filling food that easy to make.
Here’s what you’ll need for 5-6 servings:
1 whole head of cabbage sliced
1 large can of diced tomatoes
1 large onion sliced
1 carton of vegetable broth
1 can white beans
Approx. 2 lbs smoked turkey necks or other smoked turkey meat (for vegetarian version use smoked vegan sausage or bacon)
Seasoning: 1 tsp garlic powder, 1 tsp salt, 1 tsp ground black pepper
Here’s how its done:
First, heat a little oil in a large pot over medium heat. Once hot, add sliced onion and all the turkey necks (or replacement) and stir until onions begin to soften and become slightly translucent. This will start to smell delicious very quickly!
Once onions have softened (about 5 minutes), add all, yes all of the cabbage. This will seems like a TON of cabbage, but don’t worry, it’ll shrink down. Continue to to stir periodically as the cabbage shrinks down.
As the cabbage shrinks, it’ll become soft and easier to stir. Once you are able to stir easily (about 5-8 minutes), add canned tomato, broth and beans and stir until all ingredients are evenly combined.
Add all seasonings and stir. Bring to a light boil, then reduce heat to low heat, cover and simmer for 30 minutes. Once simmered, the stew is ready to be served!
You can eat as is (which is totally filling and delicious) , or you can serve it over cooked rice. Just be sure to watch out for bones, if you decided to keep the bones in. When we made this recipe, we left the turkey necks bone in and ate the meat off the bone - delicious flavor - but that’s if that’s too intense for you, you can remove meat from bones with a fork before serving.
Leftovers can be stored in the fridge for up to 7 days or in the freezer for up to two weeks. This is a truly tasty stew that is so simple to make, store and reheat!
